Try this recipe to make THE best marmalade you've eaten. This recipe comes courtesy ofone of our members called Oldgoat 1 Orange 1 Lemon 1 Grapefruit Sugar - of equal volume to processed fruit Method: Wash and quarter the fruit, remove seeds. Cut away the rinds, set aside Place quartered fruit into food processor, Add quantity of orange or lemon rinds to suit your palate and blend at high speed until well chopped up Transfer processed fruit to measuring container to establish volume then put into large open kettle. Add sugar to kettle in equal volume to that of fruit Heat and stir constantly for ten minutes or until you have a full rolling boil. Maintain the rolling boil for at least five minutes or until the mixture just begins to thicken. (The exact length of cooking time is a bit of an art learned by trial and error because heating the fruit for longer than necessary will make it too thick but not heating it long enough will cause the marmalade to not set properly in the jars.) Remove from heat and bottle immediately. Yield: approximately 1 litre of marmalade (depending on size of the fruit you choose) which will keep well in the cupboard for up to six months. I use 300ml Mason jars. Variations: I have added sliced fresh ginger on occassion and have used lime rather than lemon but the basic recipe is just downright Good Marmalade. Enjoy!
